Pulled jackfruit burger with crispy sweet potato fries

This recipe for pulled BBQ jackfruit is ready in just 20 minutes and will fool any carnivore into thinking they’re eating pulled pork.. Try it and see for yourself!

Total time: 30 mins

Ingredients:

For 2 burgers


For the pulled jackfruit:

1 can of young green jackfruit in water (not in syrup)

1 tbsp. olive oil

1 garlic clove

1/2 tsp. paprika powder

1/2 tsp. ground coriander

1/2 cup BBQ sauce

pinch of salt


Suggested toppings:

pickled red onions

pickled radishes

fresh lettuce leaves

avocado/guacamole

Sweet potato fries:

1 large sweet potato

1 tbps. flour or cornstarch

olive oil

salt and pepper

chilli flakes


Step by step recipe

1. Preheat the oven to 220 ºC.


2. Slice your sweet potato into thin slabs and toss in oil, spices and cornstarch/flour. Place on a baking tray on some parchment paper and roast in the oven for 15-20 minutes until they are crispy.


3. Drain and clean the jackfruit.


4. Heat up oil in a pan and roast the garlic. Toss in the jackfruit with all the spices and saute for 5-10 minutes.


5. Add the BBQ sauce and simmer for 10 minutes.


6. Build your delicious vegan burger with suggested toppings or experiment with any others you prefer!
